Knead a soft dough with the flour, milk, dry yeast, vegetable oil, and half the salt.
Cover the dough and rest it for 60 minutes, until risen.
Wash and finely chop the mancar greens or chard, and cut the onion into small cubes.
Turn the onion in the pan for 4 minutes, add the greens, and saute for 8 minutes until their liquid evaporates.
Add the black pepper and remaining salt to the filling, then let it cool until warm.
Divide the dough into 6 balls, roll each one out, fill with the greens mixture, and close.
Bake the pides at 220°C for 12-13 minutes, until browned.
Brush the hot pides with butter and rest for 3 minutes.
💡 Tip: If you use chard instead of mancar greens, finely chop the stems and add them to the pan first; if they go in with the leaves, the filling stays watery.
