Warm the milk, then mix it with the yeast and one third of the sugar.
Knead the flour, cardamom, salt, egg, yeasted milk, and half the butter into a soft dough.
Let the dough rise for 55 minutes until doubled.
Mix the remaining butter, cinnamon, and remaining sugar for the filling.
Roll the dough into a rectangle, spread on the cinnamon filling, and roll it up.
Cut the roll into triangular pieces and press the center of each to form the ear shape.
Rest the buns on the tray for 20 minutes and sprinkle with pearl sugar.
Bake the korvapuusti in a 190°C oven for 14 minutes until browned.
