Boil the water, butter, and salt, then add the flour all at once.
Cook the dough for 5 minutes, until a film forms on the bottom of the pot.
When the dough is warm, add the eggs one by one.
Transfer to a star-tipped piping bag and pipe into hot oil.
Fry at 180 C for 5 minutes, then coat with cinnamon sugar.
Drain on paper towels and sugar the sticks.
