Cut the fish into small cubes and chill it over ice for 10 minutes.
Roughly chop the onion, garlic, ginger, celery, and cilantro.
Put the fish, lime juice, fish stock, aji amarillo, salt, and ice in a blender.
Blend for 30 seconds, until smooth but still cold.
Pass through a fine sieve and serve immediately, very cold.
