Peel the potatoes and chop them coarsely.
Boil the potatoes in salted water for 18 minutes until soft.
Mash the potatoes with butter and milk.
Finely chop the leek and soften it in butter for 5 minutes.
Add the flour and fry for 1 minute, whisking in the fish stock and cream little by little.
Add fish, salmon, shrimp and parsley to the sauce and spread in the baking dish.
Cover it with puree and bake it in the oven at 200°C for 25 minutes until golden brown.
💡 Tip: Heating the fish in the sauce only briefly prevents it from falling apart on the second bake in the oven.
