Mix the warm water, yeast, and sugar and let it foam for 8 minutes.
Add the flour, salt, and olive oil and knead a soft dough.
Cover the dough and let it rise for 45 minutes.
Mix the za'atar, sesame seeds, and olive oil into a paste.
Divide the dough into 6 balls and roll each into a thin round.
Spread the za'atar mixture over each dough round and crumble cheese on top.
Bake the flatbreads at 230°C for 10 to 12 minutes.
Serve hot with tomatoes and cucumbers.
