Dice the sweet potato and boil for 15 minutes, until soft.
Mash the potato, and puree the shallots and garlic.
Saute the shallot-garlic paste in oil for 4 minutes.
Add the curry powder, vegetable broth, mashed sweet potato, soy sauce, and salt.
Cook the sauce for 12 minutes, until thickened.
Boil the noodles in hot water for 2 minutes and drain.
Dice the tofu and halve the eggs.
Place the noodles in bowls and serve with sauce, tofu, egg, scallions, and lime.
