Put the sugar, water, and citric acid in a heavy-bottomed pot.
Bring the syrup to a boil over medium heat, stirring.
Cook the syrup around 105°C for 45 minutes, until concentrated.
Grind the cinnamon, ginger, cloves, cardamom, coriander seeds, fennel, and nigella seeds finely.
Let the concentrated syrup cool for 20 minutes.
Add the spice mixture to the syrup and work it with a wooden spoon until it becomes a paste.
Divide the paste into thin strips on parchment paper.
Cool the strips completely and pack them in small pieces.
💡 Tip: Holding the syrup around 105°C gives the paste a glossy, pullable texture.
