Knead a medium-firm dough with the wheat flour, eggs, water, half the salt, and 2 tablespoons of olive oil.
Divide the dough into 8 balls, cover, and rest for 20 minutes so the yufka does not tear while rolling.
Finely chop the spinach, chard, parsley, and scallions, then mix with the cokelek cheese, black pepper, and remaining salt.
Roll the dough balls out thinly to the size of the tray and lay 4 yufka sheets on the bottom, lightly oiling each layer with olive oil.
Spread the herb and cokelek filling, then close with the remaining yufka sheets, oiling between the layers.
Brush the top of the borek with the remaining olive oil, mark slice lines, and bake at 185°C for 38-40 minutes.
Rest the tray for 10 minutes and serve the slices with strained yogurt.
