Pat the bonito slices dry, salt them, and let them stand at room temperature for 10 minutes.
Mix the cornmeal with a little black pepper and coat both sides of the fish.
Heat the oil in a wide pan and arrange the bonito pieces with space between them.
Fry the first side for 6 minutes; do not shorten the time, so the thick slices do not stay raw inside.
Turn and fry the second side for 5 minutes, then serve hot with lemon.
