Clean the mullet, gently open the area around the bones, and rub the inside with salt and lemon.
Soften the onions in olive oil for 6 minutes.
Add the rice, pine nuts, and currants, then toast for 4 minutes.
Add half a cup of hot water and cook the stuffing for 8 minutes, leaving the rice firm.
Stir the herbs and seasoning into the stuffing and let it cool until lukewarm.
Fill the belly of the mullet with the stuffing and tie it loosely with kitchen twine.
Bake the fish in a 190°C oven for 35 minutes.
Let it rest for 10 minutes, then slice and serve.
