Pick over the silcan greens, cut away the tough stems, and wash in plenty of water.
Boil salted water in a pot and cook the silcan for 5 minutes, keeping it firm.
Drain the greens, squeeze out excess water, and mix with the lemon juice.
Whisk the strained yogurt with crushed garlic and half of the salt until smooth.
Spread the silcan on a serving plate and spoon the garlicky yogurt over it.
Warm the red pepper flakes in olive oil for 40 seconds without burning and pour over the yogurt.
After the dish rests for 10 minutes, the green flavor moves into the yogurt; serve at room temperature.
💡 Tip: If you cannot find silcan greens, use tender mallow or wild fennel greens with the same method; shorten the boiling time according to leaf thickness.
