Peel the apples and grate them coarsely; squeeze lightly so they do not darken with excess juice.
Cook the grated apple with 1 tablespoon sugar in a nonstick pan over medium heat for 5 minutes, then remove from heat.
Put the milk in a pot; whisk in cornstarch, remaining sugar, and vanilla until smooth, then cook for 8 minutes over medium heat until thick.
Spread the cooked apple in the bottom of serving bowls and divide the hot pudding over it.
Chill the bowls for 30 minutes; sprinkle with cinnamon before serving cold.
💡 Tip: Thin apple slices give a neater layered look with pudding.
