Whisk the cornstarch with 1 cup of water in a bowl until smooth.
Put the grape molasses and remaining water in a pot and bring to a simmer over medium heat.
Pour the starch mixture into the molasses in a thin stream, stirring constantly.
Cook the kofter mixture for 18 minutes, until glossy and thick.
Add the walnuts and stir for 2 more minutes.
Spread the mixture in a small wetted tray and smooth the top with a spatula.
Rest at room temperature for 2 hours, then sprinkle with cinnamon and slice.
💡 Tip: Dissolve the starch in cold liquid before adding it to the grape molasses; starch added to hot molasses clumps and makes the kofter cut rough.
