Boil the sugar and water in a pot, add the lemon juice, and cook for 11 minutes into a lightly thick syrup.
Remove the syrup from the heat and set it aside for 25 minutes to become warm.
Coarsely chop the walnuts and melt the butter together with the vegetable oil.
Lay two pastry sheets on top of each other, brush the surface lightly with the fat mixture, and sprinkle with walnuts.
Roll the pastry around a rolling pin, scrunch it from both sides, and place it on an oiled tray.
Prepare the remaining sheets the same way and drizzle the remaining fat over them.
Bake the dessert in a 180°C oven for 32 minutes until golden.
Pour the warm syrup over the hot dessert, rest for 20 minutes, and slice.
