Pass the banana leaves through hot water to make them flexible.
Briefly process the fish fillet with the egg, coconut milk, starch, and salt.
Make a paste from the onion, garlic, lemongrass, turmeric, and hot pepper, then mix it into the fish mixture.
Finely shred the kaffir lime leaves and add them to the mixture.
Divide the mixture among the banana leaves and close them into thin packets.
Steam the packets for 10 minutes.
If desired, scent both sides in a pan for 3 minutes and serve with lime.
💡 Tip: Briefly passing the banana leaves through hot water keeps them from cracking; without leaves, small parchment packets work the same way.
🍽️ Serving suggestion: Open the packets and arrange them on an appetizer plate with lime wedges and hot sauce if desired.
