Saute the onion and garlic in olive oil for 4 minutes.
Add the spinach and cook for 6 minutes until its liquid evaporates.
When the spinach cools, mix it with the ricotta, 1 egg, nutmeg, salt, and black pepper.
Lay the first tart dough sheet in the pan and spread the filling over it.
Make 4 wells in the filling and crack one egg into each well.
Cover with the second dough sheet and press the edges closed.
Bake at 180°C for 40 minutes.
Rest for 10 minutes, then slice.
