Cook the chicken thighs, onions, parsley, ginger, turmeric, saffron, salt, and black pepper in a pot for 30 minutes.
Shred the chicken and thicken the sauce left in the pot.
Crack the eggs into the sauce one by one and cook while stirring.
Toast the almonds, then grind them coarsely with the cinnamon and half of the powdered sugar.
Layer the pastry sheets in the mold, brushing each with melted butter.
Fill with the chicken, egg sauce, and almond mixture, then close the pastry sheets.
Bake the pastilla in a 190°C oven for 25 minutes, until browned.
Sprinkle the remaining powdered sugar and cinnamon over the top, then slice.
