Peel the plantains and slice them 2 cm thick.
Heat the oil over medium-high heat.
Fry the plantain slices for the first time, 3 minutes per side.
Transfer the slices to paper towels and rest for 3 minutes.
Flatten each slice between two sheets of parchment with the bottom of a glass.
Return the flattened plantains to the oil and fry for 3 to 4 minutes, until crisp.
Sprinkle with salt and serve hot with hogao sauce.
💡 Tip: Resting the plantain for three minutes after the first fry keeps it from breaking when flattened.
