Slice the leeks into thin rings.
Grate the carrot and chop the dill.
Mix leeks, carrot, dill, eggs, flour, salt, and black pepper.
Rest for 5 minutes so the mixture does not water out too much, then stir again.
Heat the oil in a pan and drop in spoonfuls of the mixture.
Cook the fritters for 3 minutes on each side until browned.
