Cut the meat into large 4 to 5 cm chunks; mix paprika, brown sugar, garlic powder, salt, and black pepper into a rub and massage it over every side of the meat.
Rest the meat covered in the refrigerator for 1 hour; meanwhile heat the oven to 150°C.
Place the meat in a deep casserole or baking tray, add 1 cup water, cover, and bake for 4 hours; spoon the liquid from the bottom over the meat every hour.
When the center reaches 90°C and the meat pulls apart easily with a fork, remove from the oven, rest for 15 minutes, shred with two forks, and mix with half the barbecue sauce.
Split the sandwich buns, pile plenty of pulled beef on the bottom halves, drizzle with the remaining barbecue sauce, add coleslaw, close the tops, and serve hot.
💡 Tip: Cook the brisket low and covered until it shreds easily; add sauce after pulling so the fibers stay juicy.
🍽️ Serving suggestion: Serve hot in buns with coleslaw.
