Mix the wheat flour, instant yeast, and salt in a large bowl.
Add the warm water gradually and knead for 8 minutes into a soft, slightly sticky dough.
Cover the dough and leave it to rise in a warm place for 70 minutes.
Divide the dough into 6 balls and roll each one to 20-22 cm across.
Grease a cast-iron pan very lightly with olive oil and heat over medium-low heat.
Cook the bazlama for 3-4 minutes on each side; if the edges stay pale, hold them upright with tongs and turn.
Place the cooked bazlama between clean cloths and soften with their steam for 5 minutes.
💡 Tip: Do not make the dough stiff by adding too much flour; for soft bazlama, a texture that lightly sticks to the hand is better.
🍽️ Serving suggestion: Serve hot bazlama in a breakfast basket with optional butter, tulum cheese, and tomatoes.
