Mix the dry ingredients, flour, yeast, salt, and sugar, in one bowl, and mix the wet ingredients, warm milk, egg, and melted butter, in another bowl.
Work the wet mixture into the dry ingredients and knead until you have a smooth, soft dough. Cover it and proof in a warm place for 20 minutes.
Take walnut-sized pieces from the dough, roll them between your palms, and arrange them on a greased tray.
Brush the tops with egg yolk and sprinkle with sesame seeds or nigella seeds. Bake in a preheated 185°C oven for 25 minutes, until the tops turn golden.
Serve hot while the surface is glossy. If they cool, the crisp edges soften, so they are best eaten warm.
