This Kayseri-style pilaf mixes lentils, rice, and spicy sausage into a filling one-pot meal.

Rinse the green lentils, boil them in plenty of water for 15 to 20 minutes until firm, and drain. Soak the rice in warm salted water for 10 minutes and rinse.
Slice the beef sucuk into half-moons. Heat the oil in a pot, cook the slices over medium heat for 3 to 4 minutes to release their fat, then remove with a slotted spoon.
Add the finely chopped onion to the same fat and fry for 4 minutes until pink. Add the tomato paste and stir for 1 minute more.
Add the drained rice and toast for 2 minutes until the grains turn translucent, then add the lentils, beef sucuk, salt, and black pepper.
Pour in 3 cups hot water, bring to a boil, cover, and cook over low heat for 15 minutes until the water is absorbed.
Remove from heat, add the butter on top, sprinkle with dried mint, rest covered for 10 minutes, then stir and serve.
💡 Tip: Do not discard the beef sucuk fat; it seasons the pilaf. After removing the slices, toast the onion and rice in the same fat. Keep the lentils firm.
🍽️ Serving suggestion: Serve hot with dried mint on top and cacik or yogurt; pickles go well on the side.
