Boil salted water in a wide pot and cook the noodles for 5 to 6 minutes according to the package instructions; rinse with cold water, drain, and mix with 1 tablespoon sesame oil.
Lightly crush the cucumbers with a rolling pin and tear them roughly into 5 cm pieces, using the pai huang gua technique; crush the garlic and slice the scallions into rings.
Smooth the sesame paste with 2 tablespoons hot water; add soy sauce, rice vinegar, granulated sugar, and crushed garlic and whisk.
Place the cooled noodles in a wide bowl, pour the sauce over them, add the cucumbers, and toss until evenly coated.
Divide onto a serving plate and scatter toasted sesame and scallions over the top.
Serve cold or at room temperature; optionally adjust the spice balance with 1 teaspoon chili oil.
💡 Tip: Thin the sesame paste with 2 tablespoons hot water before using it; otherwise it will not cling to the noodles. Crushing and roughly tearing the cucumber, the pai huang gua technique, helps it hold the sauce better.
