Wash the zucchini and slice into 1.5 cm rounds; crush the garlic and finely chop the parsley.
Heat the olive oil in a wide pot, turn the garlic for 30 seconds, add the zucchini, and sear each side for 4 minutes.
Sprinkle with salt, black pepper, and red pepper flakes, add 1 cup water, cover, and cook over low heat for 12 minutes, until the zucchini softens.
Whisk the tahini with lemon juice and 2 tablespoons cooking liquid until smooth.
Drizzle the tahini sauce over the zucchini and warm for 1 more minute over low heat, without boiling.
Transfer to a serving plate, scatter plenty of parsley on top, and serve warm or at room temperature.
💡 Tip: Do not add the tahini sauce directly to the hot dish; first smooth it with 2 tablespoons cooking liquid, otherwise it clumps. Do not slice the zucchini too thin, 1.5 cm rounds keep their shape.
