Slice the bananas into rounds, coarsely crush the walnuts, and put the tahini in a separate bowl.
Open the flatbread sheets on the counter; spread tahini over one half of each sheet, then distribute the banana slices and crushed walnuts evenly.
Sprinkle with cinnamon and drizzle over 1 tablespoon molasses; fold the empty half over to form the filled flatbread.
Heat a nonstick pan over medium-low heat, lay the filled flatbreads on the surface greased with olive oil, and cook the first side for 3 minutes until golden.
Turn and brown the other side for 3 more minutes; the banana should warm while the flatbread does not burn.
Cut into triangles, place on a plate, drizzle with the remaining molasses, sprinkle with extra walnuts, and serve hot.
💡 Tip: Use ripe bananas; underripe bananas cannot balance the sesame aroma of tahini. Do not overheat the pan, since the flatbread browns quickly before the banana warms through.
