Add the granulated sugar and yeast to lukewarm water and wait 5 minutes, until the top foams.
Sift the flour and salt into a large bowl; make a well in the center, add the activated yeast and olive oil, and knead for 8 to 10 minutes until you have a smooth, elastic dough that does not stick to your hands.
Place the dough in a lightly oiled bowl, cover it, and let it rise in a warm place for 60 minutes, until doubled.
Transfer the dough to a lightly floured counter and roll it into a rectangle about 40x30 cm. Spread the tahini evenly over it, scatter half the sesame seeds, and leave a 1 cm border around the edges.
Roll tightly from the long side and cut into 8 equal pieces; arrange them on a parchment-lined tray, brush with egg yolk, and sprinkle with the remaining sesame seeds.
Bake in a preheated 190°C oven for 18 to 22 minutes, until the tops are golden brown; rest on a wire rack for 10 minutes before serving.
