Heat the oven to 200°C and grease the tray with butter.
Prepare the sauce by whisking the milk, melted butter and egg until smooth.
Mash the white cheese with a fork, then add the optional chopped parsley, salt and black pepper to make the filling.
Lay the first yufka sheet in the tray and drizzle some of the sauce over it, then place the second yufka the same way.
Spread the filling evenly, cover with the remaining two yufka sheets with sauce between them and pour plenty of sauce over the top.
Bake in a 200°C oven for 22 to 25 minutes, until the top turns golden, then rest for 5 minutes and serve sliced.
💡 Tip: Leaving the yufka sheets slightly wrinkled as you lay them down makes the borek look more layered and airy as it bakes. If the white cheese is salty, do not add extra salt to the filling.
