Put the lamb shank, water, onion, and half of the salt in a pot.
Boil over low heat for 80 minutes, until the meat pulls from the bone.
Remove the meat, shred the lamb shank into fibers, and strain the meat broth.
Whisk the yogurt, flour, egg yolk, and lemon juice in a separate bowl until smooth.
Warm the liaison with three ladles of hot meat broth, then slowly stir it into the strained broth.
Add the shredded meat and remaining salt to the soup and cook over low heat for 8 minutes.
Foam the butter with red pepper flakes and dried mint for 1 minute, then drizzle over the soup.
