Rinse the freekeh, soak in warm water for 10 minutes, and drain.
Melt the butter in a pot; soften the finely chopped onion for 4 minutes, add garlic, and turn for 30 seconds.
Cut the chicken breast into 2 cm cubes, add to the pot, and saute over high heat for 5 minutes until the outside turns white.
Add tomato paste, salt, and black pepper and fry for 1 minute.
Add the drained freekeh and turn for 2 minutes; add 4 cups hot water and lemon juice, bring to a boil, cover, and cook over low heat for 25 minutes.
Remove from heat, rest covered for 10 minutes, stir, and serve.
