Cut the chicken breast into 2 cm cubes and season with salt and black pepper; finely chop the onion.
Melt the butter in a pot; soften the onion for 4 minutes, add crushed garlic and tomato paste, and fry for 1 minute.
Add the chicken cubes and saute for 5 minutes until they change color.
Add the orzo and toast for 3 to 4 minutes until golden.
Add the cooked chickpeas, 2.5 cups hot water, and black pepper; cover and cook over low heat for 15 minutes until absorbed.
Remove from heat, cover with a clean towel, rest for 10 minutes, fluff with a fork, and serve.
💡 Tip: Toast the orzo until golden while stirring constantly so it does not burn; if too dark, the pilaf tastes harsh. Always add hot water.
