Trim the fresh green beans by snapping off the ends, then cut into 2 cm pieces.
Finely chop the onion and saute in olive oil for 4 minutes; add the crushed garlic and turn for 30 seconds.
Add the chopped beans and saute for 5 minutes; add the grated tomatoes and tomato paste and cook for 3 minutes.
Add the bulgur and toast for 1 to 2 minutes while turning; season with salt and black pepper.
Add 2.5 cups hot water, close the lid once it boils, and cook over low heat for 15 minutes, until the water is absorbed.
Remove from the heat, sprinkle with optional dried mint, cover with a kitchen towel, and rest for 10 minutes before fluffing and serving.
💡 Tip: Toast the bulgur with the tomato paste for 1 to 2 minutes so the grains open separately. After cooking, cover the pot with a clean kitchen towel and rest for 10 minutes; do not leave the green beans too thick.
