Boil the soapwort root with water for 20 minutes, then strain.
Put the grape juice in a wide pot, add the food-grade clarifying clay, and rest for 15 minutes.
Strain the grape juice from the top into another pot and do not use the sediment at the bottom.
Boil the grape must over medium heat for 50 minutes, until thick but more fluid than molasses.
Add the soapwort water gradually and whisk with a large spoon for 12 minutes.
When the bulama turns pale and foamy, remove it from the heat.
Divide into bowls, sprinkle with walnuts, and serve at room temperature.
💡 Tip: Do not use clarifying clay unless it is food-grade; if unsure at home, strain the grape juice through fine cheesecloth and skip that settling step.
🍽️ Serving suggestion: Serve bulama in small bowls with coarse walnuts on top and optional plain Turkish coffee.
