Put the flour on a wide tray and sprinkle in water little by little, rubbing with your fingertips to make small crumbs.
Leave the crumbs uncovered for 10 minutes so they do not stick together.
Boil the water or vegetable stock in a pot and add the salt.
Sprinkle the umac crumbs into the pot while stirring.
Cook the soup over low heat for 12 minutes.
Temper the yogurt with a ladle of hot soup and stream it into the pot.
Foam the butter with mint and black pepper for 1 minute, then drizzle it over the soup.
💡 Tip: Do not dump the umac crumbs into the pot all at once; sprinkling them in gradually prevents clumping.
