Soak the fine bulgur and semolina in warm water for 15 minutes so they swell.
Finely chop the onion and cook it in olive oil in a pan until lightly pink; add the ground beef and brown for 8 minutes until its liquid evaporates.
Add the pepper paste, isot pepper, cumin, black pepper, and walnuts, turn for 2 more minutes, then remove from the heat and add the parsley.
Knead the swollen bulgur and semolina with salt, isot pepper, and the remaining olive oil for 6 minutes until it becomes a soft dough-like mixture.
Press half of the outer mixture into a greased tray with wet hands; spread the filling over it, cover with the remaining outer mixture, and cut into diamond shapes.
Brush with olive oil and bake in a 200°C oven for 30 minutes; once the top turns lightly pink, remove, rest for 5 minutes, and serve.
💡 Tip: Press the top layer with wet palms; the surface closes smoothly without cracking. While kneading the outer mixture, soak the bulgur and semolina first in warm water for 15 minutes.
🍽️ Serving suggestion: Cut the tray oruk into squares and serve with lemon and sumac onion salad without breaking up the fine bulgur surface.
