Dice the onion, crush the garlic and finely chop the parsley; check the diced meat and cut any large pieces smaller.
Melt half the butter in a pot over medium heat and sear the meat on all sides for 6 minutes.
Add the onion and cook for 4 minutes until lightly pink; turn the garlic for 30 seconds, add 1 cup hot water, cover and soften the meat over low heat for 25 minutes.
Add the coarse bulgur, the remaining 1.5 cups hot water, salt and black pepper to the pot.
Cover and cook over low heat for 14 minutes, until the bulgur absorbs its liquid.
Remove from the heat and add the remaining butter; cover the lid with a cloth and let it steam for 5 minutes.
Gently stir the pilaf, transfer it to a serving plate, sprinkle parsley on top and serve hot.
💡 Tip: To tenderize the meat, it must cook covered for 25 minutes with 1 cup hot water; otherwise the timing will not match the bulgur. Do not wash the bulgur, its starch binds the dish.
