Dice the onion, rinse and drain the rice, and soak the currants in warm water for 10 minutes.
Melt the butter in a pot over medium heat, cook the onion for 5 minutes until lightly pink, then add the drained rice and turn for 2 minutes.
Add the currants, cinnamon, salt, and black pepper to the pot and fry for 30 seconds.
Add the boiled green lentils and hot water, then stir once.
Cover and cook over low heat for 14 minutes, until the rice absorbs the water.
Remove from the heat, cover the lid with a cloth, and let it steam for 5 minutes.
Gently stir without crushing the lentils, transfer to a serving plate, and serve hot.
💡 Tip: Soak the currants in warm water for 10 minutes so they distribute evenly in the pilaf and add sweet balance. Soak the rice in warm salted water for 30 minutes to remove starch and keep the grains separate.
🍽️ Serving suggestion: Transfer to a serving plate, sprinkle roasted pine nuts on top, and serve with homemade yogurt or a green salad.
