Rub the beef cubes with salt and black pepper.
Saute the meat in olive oil for 10 minutes, until the surface browns.
Add the onions and garlic and soften for 5 minutes.
Add the tomato paste and fry for 3 minutes, until its raw smell fades.
Add the carrots, cabbage, eggplant, and hot water, and cook for 28 minutes.
Transfer the vegetables to a plate and add the rinsed rice to the pot.
Cook the rice for 24 minutes, until it absorbs the liquid, then place the vegetables on top and rest for 8 minutes.
💡 Tip: Check the salt in the meat broth before adding the rice; once the pilaf absorbs the liquid, correcting the salt is difficult.
