Pick over the gulik greens, wash them well, and chop them like spinach.
Rinse and drain the rice.
Saute the onion in butter for 5 minutes.
Add the gulik greens to the pot and cook them down for 6 minutes.
Add the rice, water, and salt and cook the soup for 18 minutes.
Rest the soup for 5 minutes and ladle into bowls.
