Knead the chickpea flour, fenugreek leaves, one third of the salt, and 2 tablespoons water into a firm muthiya dough.
Shape small pieces from the dough and steam them for 10 minutes.
Pulse the coconut, peanuts, sesame, cilantro, green peppers, ginger, lemon juice, and one third of the salt into a coarse paste.
Cut the potatoes, eggplants, and sweet potato into large pieces, and trim the green beans.
Heat the vegetable oil in a pot and turn the potatoes and sweet potato in it for 8 minutes.
Add the eggplant, green beans, peas, and spice paste, then pour in 1 cup water.
Cover the pot and cook the vegetables over low heat for 30 minutes, shaking the pot occasionally.
Add the muthiya pieces, cook together for 8 minutes, and serve hot.
💡 Tip: Do not stir the vegetables often; shaking the pot now and then lets the eggplant and potatoes cook without breaking apart.
