For the kebab, grate the onion and squeeze out its juice, then crush the garlic.
Knead the ground beef, tail fat, onion, garlic, tomato paste, Urfa pepper, cumin, salt, and black pepper for 8 minutes.
Rest the mixture in the refrigerator for 25 minutes.
Press the mixture onto metal skewers.
Add the tomatoes and green peppers to the tray.
Bake the skewers at 220°C for 18 minutes until browned.
Rub the serving onion with sumac.
