Mix the warm milk, yeast, and sugar, then let it stand for 8 minutes.
Knead the flour, salt, egg, melted butter, and yeast milk into an elastic dough.
Let the dough rise for 45 minutes.
For the filling, melt 60 g butter and toast 1 cup flour until it smells nutty and changes color.
Add the crushed walnuts to the toasted flour and prepare the filling.
Roll out portions of dough, place the filling in the center, close them, and round them off.
Arrange the pastries on a tray and brush the tops with egg yolk.
Bake in a 180°C oven for 30 minutes, until browned.
💡 Tip: Toast the flour for the filling over low heat while stirring constantly; if it browns too far it turns bitter, and if it is under toasted it stays doughy.
🍽️ Serving suggestion: Serve Van coregi sliced at breakfast with herb cheese, honey, butter, and strong brewed tea.
