Van Kavut is a warm breakfast bowl from eastern Türkiye, made by roasting flour in butter and finishing it with walnuts and grape molasses.

Coarsely crush the walnuts and crush the cardamom.
Melt the butter in a wide pan over medium-low heat.
Add the wheat flour and toast for 8 minutes, stirring constantly, until the color turns slightly; sprinkle in the salt, cardamom, and granulated sugar.
Add the walnuts and turn for 1 more minute so the toasted aroma comes out.
Transfer the kavut to a serving plate.
Drizzle grape molasses over the top and serve while hot.
If it waits and the flour mixture becomes heavy, you can loosen it with 1 tablespoon warm milk.
💡 Tip: Toast the wheat flour in butter over medium-low heat while stirring constantly; otherwise it burns on the bottom and the characteristic nutty aroma of kavut disappears. Cardamom is a Van signature in kavut and should not be omitted.
