Combine the flour, instant yeast, salt and warm water in a mixing bowl and work for 6 minutes, then cover and let rise in a warm place for 30 minutes.
Divide the risen dough into balls, roll each into a thin yufka, brush with melted butter and fold.
Sprinkle grated kashar cheese, thyme and black pepper over the top surfaces, then transfer to a tray lined with baking paper.
Bake in a preheated 220°C oven for 12 minutes, until the tops turn golden.
Rest the loaves from the oven for 3 minutes, then slice and serve hot.
