Split the oily kete breads in half, mash the tulum cheese, slice the tomato into thin rounds, and chop the parsley.
Mix the mashed tulum cheese with thyme and black pepper to prepare the filling.
Spread the cheese mixture evenly on the lower halves of the opened kete breads, place tomato slices on top, and close with the upper halves.
Heat the butter and olive oil together in a nonstick pan over medium-low heat, then toast the sandwiches covered for 3 minutes on the first side.
Turn the toasts and cook the other side for 3 more minutes, checking that the tulum cheese has softened.
Transfer to a plate, slice in half, scatter parsley over the top, and serve hot.
💡 Tip: Cook the toast covered so the tulum cheese softens; otherwise the outside browns while the cheese stays firm. Do not press the oily kete too hard, since a light hand preserves its layers.
🍽️ Serving suggestion: Slice the hot toasts in half, plate them, scatter finely chopped parsley on top, and serve with strong tea, olives, and tomato slices.
