Rinse the basmati rice, soak it in cold water for 30 minutes, and drain.
Put the lamb, 1 onion, garlic, ginger, cardamom, cinnamon, cloves, bay leaves, water, and half the salt in a pot.
Boil the meat for 60 minutes until tender, then strain and reserve the yakhni broth.
Thinly slice the remaining onion and fry it in vegetable oil for 9 minutes, until light brown.
Add the boiled meat and cumin and toss for 4 minutes.
Add the yogurt and stir constantly for 3 minutes so it does not curdle.
Add the drained rice and 3.5 cups of the yakhni broth.
Cook the pilaf for 12 minutes until the liquid is absorbed, then let it steam for 10 minutes.
💡 Tip: Soak the rice for at least 30 minutes; it is the simplest way to keep the grains long and intact in the yakhni.
