Gently separate the rice with your hands and break up any clumps.
Clean the shrimp, and dice the smoked beef and carrot.
Heat 1 tablespoon of oil in a wok and stir the shrimp and smoked beef for 1 minute, then set aside.
Add the remaining oil to the wok, heat the rice for 2 minutes, and coat the grains with oil.
Push the rice aside, cook the beaten eggs in the empty space for 45 seconds, and mix.
Add the peas, carrot, soy sauce, salt, and white pepper.
Return the shrimp and smoked beef, and toss over high heat for 2 minutes.
Add the scallions and serve immediately.
💡 Tip: Using cold rice cooked the day before keeps the grains separate instead of mushy.
