Loosen 4 tablespoons tarhana with 1 cup cold water and let it stand for 10 minutes.
Melt 1 tablespoon butter in a pot and roast 1 dessert spoon tomato paste for 2 minutes.
Add 5 cups hot water and whisk in the tarhana.
Cook over low heat for 15 minutes, stirring now and then so the tarhana does not stick to the bottom.
Turn the mint in hot butter for 45 seconds and drizzle it over the soup.
