Drain the lor cheese in cheesecloth for 5 minutes and mash it with a fork; mix with zahter, sumac, salt, black pepper, and olive oil.
Slice the tomato into 3 mm rounds.
Spread the lor filling on one bread slice, place the tomato slices on top, and close with the second slice of bread.
Cook the toasts in a nonstick pan over medium heat for 6 minutes, until both sides are golden.
Slice the toasts diagonally, transfer to a plate, sprinkle extra sumac on top, and serve hot.
💡 Tip: Drain the moisture from the lor cheese in cheesecloth for 5 minutes, otherwise the toast becomes watery. Mix the zahter with olive oil 3 minutes ahead so the aroma deepens.
